Ingredients
  

For the eggs
  • 6 pieces large eggs Farm-fresh eggs are recommended for better flavor.
For the filling
  • 1 medium ripe avocado Choose a bright green, slightly soft avocado.
  • 1 tablespoon fresh lemon juice Use real lemon juice, not bottled.
  • 2 tablespoons mayonnaise Smooth mayo works best.
  • ½ teaspoon garlic powder Adjust to taste.

  • optional smoked paprika or chopped chives Sprinkle on top for extra flavor.
  • optional crispy bacon bits Use for a tasty garnish.

Method
 

Preparation
  1. Boil and peel the eggs. Allow them to cool.
  2. Slice each egg in half and remove the yolks into a mixing bowl.
Mixing the Filling
  1. Mash the yolks with the ripe avocado until smooth.
  2. Add lemon juice, mayonnaise, garlic powder, salt, and pepper. Mix until creamy.
Assembly
  1. Spoon or pipe the creamy mixture back into the egg whites.
  2. Sprinkle with paprika, chives, or bacon bits if desired.

Notes

For the best flavor, prepare close to serving time. If making ahead, press plastic wrap directly onto the filling to keep it fresh.
