Ingredients
  

For the fritters
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon plus more for sprinkling on top
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • ½ cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups chopped apples firm varieties like Granny Smith
  • 2 tbsp lemon juice to toss with chopped apples
For the glaze (optional)
  • 1 cup powdered sugar
  • 2 tbsp milk

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, cinnamon, brown sugar, and granulated sugar.
  3. In another bowl, whisk together the milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Toss the chopped apples with lemon juice before folding them into the batter.
  6. Let the batter rest for 5-10 minutes to relax the flour.
Baking
  1. Using a spoon or ice cream scoop, drop spoonfuls of the batter onto the lined baking sheet, leaving space between each fritter.
  2. Bake for about 20 minutes, or until golden brown on top.
Glazing (optional)
  1. While the fritters are baking, mix the powdered sugar and milk together to form a glaze.
  2. Brush or drizzle the glaze over the fritters right after they come out of the oven.

Notes

For a festive touch, try adding nutmeg or ginger to the batter. These fritters are best enjoyed fresh but can be stored in an airtight container for up to two days. They can also be frozen for longer storage.
