Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lay out the cod fillets in a lightly greased baking dish.
  3. Sprinkle salt and pepper over the cod fillets.
Making the Sauce
  1. In a bowl, whisk together Dijon mustard, lemon juice, and heavy cream until well combined and pale yellow.
Baking
  1. Pour the sauce gently over the fish.
  2. Bake uncovered for 15-20 minutes, or until the fish flakes easily with a fork and the sauce is bubbly.
  3. Monitor closely to avoid overbaking.
Finishing Touches
  1. Optional: Add lemon zest or an extra sprinkle of black pepper before serving.

Notes

For best results, don’t rush thawing frozen fish. Refrigerate in advance or use cold water to thaw quickly. Crowding the fish can cause the sauce to become soupy. Leftovers can be stored in an airtight container and reheated gently.
