Ingredients
  

For the batter
  • 1 head head of cauliflower Chopped into bite-sized pieces
  • 1 cup all-purpose flour Can substitute with chickpea flour
  • 1 cup non-dairy milk Almond or oat milk recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
For the buffalo sauce
  • 2 tablespoons butter Melted. Can substitute with olive oil
  • ½ cup buffalo sauce Brands like Frank’s RedHot work great

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Chop the cauliflower into bite-sized pieces.
  3. In a bowl, mix together the flour, non-dairy milk, garlic powder, and salt until you have a thick paste.
  4. Toss the cauliflower pieces in the batter until well coated.
Baking
  1. Spread the coated cauliflower on a baking sheet lined with parchment paper.
  2. Bake for 20 minutes until crispy on the tips.
  3. In a separate bowl, mix together melted butter and buffalo sauce.
  4. After the initial baking, remove cauliflower from the oven and dunk or brush the pieces in the buffalo sauce mixture.
  5. Return to the oven and bake for an additional 20 minutes.
  6. Remove from the oven and let cool for a minute before serving.

Notes

For maximum crispiness, don’t overcrowd the pan and broil for the last couple of minutes. These cauliflower bites can be stored in the fridge for up to 3 days and reheated at 375°F (190°C) for 8 minutes for best results. Feel free to experiment with different sauces or add extra spices as desired.
