- In a mixing bowl, mash the ripe bananas until smooth or leave some chunks for texture.
- Add the cottage cheese, eggs, and vanilla extract to the mashed bananas; mix until well combined.
- Gently fold in the flour until just incorporated; do not overmix.
Cooking
- Heat a non-stick skillet over medium heat and grease lightly with oil or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes on each side or until golden brown and cooked through.
- Repeat with the remaining batter, keeping cooked pancakes warm in a low-heat oven if necessary.
Notes
These pancakes freeze well; let them cool completely before placing in a zip bag with wax paper between layers. Reheat in the microwave or a skillet. Top with chocolate chips, nuts, maple syrup, or yogurt for added flavor.
