- Preheat the waffle iron.
- In a mixing bowl, combine Greek yogurt, eggs, milk, and vanilla extract. Mix until smooth, leaving some lumps.
- Add the flour, baking powder, salt, and sweetener. Stir until just combined.
- Fold in the melted butter or coconut oil gently.
Cooking
- Pour batter into the preheated waffle iron and cook until golden brown, approximately 4 minutes.
- If waffles appear pale, cook for an additional minute.
Notes
Store any leftovers in a zip bag in the fridge for a couple of days or freeze for later use. Reheat in the toaster for best results.
