Ingredients
  

For the cake
  • 1 cup all-purpose flour Sifted
  • 3 large eggs At room temperature
  • 1 cup granulated sugar For sweetness
  • 1 tsp purple food coloring Use quality food coloring for vibrancy
  • 1 tsp vanilla extract
For the filling
  • 8 oz cream cheese Reduced-fat preferred
  • 1 cup powdered sugar For sweetness and consistency
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whip eggs and sugar until fluffy and light in color.
  3. Gently fold in the sifted flour and purple food coloring until well combined.
Baking
  1. Pour the batter onto the prepared jelly roll pan and spread evenly.
  2. Bake in the preheated oven for about 12 minutes, until it springs back when touched.
  3. While the cake is still hot, flip it onto a towel dusted with powdered sugar and roll it up gently.
Filling and Rolling
  1. Let the rolled cake cool for a few minutes, then carefully unroll it.
  2. Spread the cream cheese filling evenly over the cake.
  3. Reroll the cake tightly, wrap it in plastic wrap, and chill before slicing.

Notes

Chilling the filled roll before slicing results in cleaner cuts. You can freeze leftovers if needed. Experiment with different food colorings or fillings!
