  • 1 cup Red lentils Can substitute with yellow lentils or split peas
  • 1 large Sweet potato Can substitute with butternut squash or pumpkin
  • 1 cup Quick oats Can substitute with panko or breadcrumbs
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 Egg Or use a flax egg for a vegan option
  • 2 tablespoons Cilantro Can substitute with parsley or basil
  • 1 teaspoon Curry powder Optional, for an extra kick
Creamy Avocado Sauce Ingredients
  • 1 large Avocado
  • 1 tablespoon Plain yogurt Can substitute with sour cream or skip for a vegan option
  • 1 tablespoon Lemon juice
  • 2 tablespoons Cilantro
  • to taste Salt and pepper Adjust as needed
  • water to thin the sauce if necessary

Method
 

Preparation
  1. Boil the red lentils until they are mushy.
  2. Steam or microwave the sweet potato until fork-tender.
  3. Mash the cooked lentils and sweet potato together in a bowl.
  4. Add chopped onion, minced garlic, oats, egg (or flax mix), and spices to the bowl. Mix until it holds together.
  5. If the mixture feels too wet, add more oats.
  6. Form the mixture into palm-sized patties.
Cooking
  1. Heat a skillet with a bit of oil over medium heat.
  2. Fry the patties until golden brown on both sides, about a few minutes per side.
Sauce Preparation
  1. In a blender, combine avocado, yogurt, lemon juice, chopped cilantro, salt, and pepper.
  2. Blend until smooth, adding water if the sauce is too thick.
Serving
  1. Dollop the creamy avocado sauce generously on the patties before serving.

Notes

Don't overcook the lentils. Chill the mixture for about 10 minutes before shaping patties. Wet hands can make shaping the patties easier. Store leftovers in the fridge or freeze cooked patties for best texture.
